Cabernet Franc is a red wine grape variety, one of the few reds that grow very well along the Black Sea. The moderate-continental climate, strongly influenced by the proximity of the Black Sea, with the characteristic breeze circulation, the relatively dry summer and the long and warm autumn, influence the development of specific characteristics of the variety in this region, making it suitable for PDO and PGI registration.

Medium-late ripening variety. the vines are characterized by medium growth. In terms of resistance to pests and diseases, the Cabernet Sauvignon variety is superior. Rot resistant. The bunch is medium, cylindrical or conical, medium dense, sometimes loose. The grains are medium, round, black-blue, with an abundant wax coating. The skin is dense, thick. The meat is juicy.

It is used to prepare table, fortified and dessert wines and juices. Varietal wines have a pale red color, with aromas of raspberries, blackberries, blackcurrants, blueberries, and when the wines have been aged longer, spices and musk can be felt. It is also used to make blended wines, usually blended with Cabernet Sauvignon and Merlot without being a dominant variety.

In principle, the qualities of Cabernet Franc allow it to be successfully combined with many different foods, especially when the wine is low in tannins. Perfectly combined with chicken, fish, quiche. Wines from this variety with higher acidity go well with tomato-based dishes, vinegar-based sauces, or beluga-type black lentils. You can also enjoy it in the company of grilled meats - pork, veal, duck, lamb. Grilled vegetables, well flavored with aromatic spices - for example rosemary and mint - are also a great suggestion. Undoubtedly, this variety also goes well with almost all cheeses such as gorgonzola, parmesan, Swiss hard cheeses, cheddar, goat cheese, blue cheeses.
